What Makes Maryland Crab Cakes the Best?

There are many reasons that Maryland is known for the best crab cakes in the world!

Here on the East Coast, seafood is king. Maine has their lobsters, Florida has their deep-sea fish, and Maryland has their crabs, which we’ve turned into crab cakes envied the world over. They’re the highlight of the summer for many native Marylanders, and a pleasant surprise for outsiders waiting to be indoctrinated. Why have we married the crab cake, though? And why is it Maryland crab cakes that have the fame and glory? Part of our lauded historical connection to the crab cake comes from a man named Crosby Gaige, who introduced the “Baltimore Crab Cake,” in his 1930 cookbook, New World’s Fair Cook Book, thus securing Maryland a spot in the culinary cannon of a burgeoning America.

The Latin name for the blue crabs found in the Chesapeake Bay is “Callinectes sapidus,” which means “beautiful swimmer” – a good sign already. Part of the reason our crab cakes are so famous is that we’ve got optimal conditions for crabs to thrive, the estuary of the Chesapeake Bay. Blue crabs, though, have a deeper flavor bed and a more delicate texture than other popular varieties of crab, like the Dungeness crabs of the West Coast, which are easier to eat because of their size. Hibernation seems to be the main reason that blue crabs from Maryland thrive over Nova Scotian or Uraguayan blue crabs. Crabs needs to hibernate to build up fast stores to sustain them through the cold – because our blue crabs have a protracted high season, from April to early November, their able to store the most fat, which makes the fat mustard colored, as any Maryland crab-eater will tell you.

Old Bay is our secret ingredient (not such a big secret,) and of course part of the secret is making sure your fingers are saturated and spicy while you’re dipping into your crab cakes. Additionally, we make our crab cakes using onions and green peppers in the mix, and we use the backfin of the crab, which is only found in Maryland crab cakes. Other considerations, like the bread crumb to crab meat ratio, are essential.
