As temperatures are dropping and the air is changing, so must our approach to summertime classics like crab cakes. This summer, we’ve explored so many different ways to cut the heat and heaviness of a crab cake: adding salsa, flavoring the crab meat for a Cajun-style dinner, and swapping the sides for something lighter and more complimentary. Today, we’re going to do something dangerous. We’re going to mess with the core crab cake itself, using millennials’ favorite accoutrement: avocado! Adding avocado to the mix creates a rich, thick, scrumptious crab cake that will trick your children into eating avocado, helping them absorb vitamin K, copper, pantothenic acid, vitamin B6, vitamin E, and vitamin C, especially all those healthy fats we also hear attributed to the avocado.
You’ll need to gather all of your materials together – let’s go! You’ll need:
- 2 avacados, peeled and mashed
- ½ pound Maryland crabmeat
- ½ pound shrimp, peeled and chopped,
- 2 ½ cups panko breadcrumbs, divided
- ½ cup vegetable oil
Lay all of these ingredients out on your counter in order of which will be used first. Always try to throw away scraps you won’t need to avoid cluttering your working space, like the avocado peels and the Styrofoam crab and shrimp containers.
Get to Mixing!
Mix the avocados, crabmeat, shrimp, and one cup of the breadcrumbs together in a big bowl. Salt and pepper it to taste, and add whatever seasonings of your own you think would be appropriate! Combine until smooth. In a separate bowl, pour the remaining breadcrumbs in a medium bowl and form the avocado mixture into patties about three inches wide. Dip the patties into the breadcrumbs to coat, and set them aside. Heat the oil in a skillet over medium-high heat until the oil is popping. Fry each patty until golden brown, and you’re finished! Top the patties with a cool dollop of sour cream, or even some guacamole if you’d like to emphasize your avocado theme.
