There are many tasty sides to pair with Box Hill crab cakes, but one of the best sides during the summer is a variety of grilled vegetables. The vegetables pair perfectly with a crab cake, as they are light and fresh, and add a healthy element to the meal while still tasting delicious! Grilled Vegetable Medley Recipe

For this grilled vegetable medley to eat with your crab cakes, you’ll need all kinds of fresh vegetables. This recipe makes six servings, and the ingredients include three red bell peppers, seeded and halved, three yellow squash, sliced lengthwise into 1/2-inch-thick rectangles, three zucchini, sliced lengthwise into 1/2-inch-thick rectangles, three Japanese eggplants, sliced lengthwise into 1/2-inch-thick rectangles, twelve cremini mushrooms, one bunch of asparagus, trimmed, and twelve green onions with the roots cut off. In addition to the vegetables, you can also make a vinaigrette with 1/4 cup plus two tablespoons of olive oil, three tablespoons of balsamic vinegar, two garlic cloves, minced, one teaspoon of chopped Italian parsley leaves, one teaspoon of chopped basil leaves, ½ teaspoon of chopped rosemary leaves, and salt and pepper to taste.

Start by placing a grill pan over medium-high heat or prepare your grill at medium-high heat. After chopping your vegetables, brush them with ¼ cup of the olive oil to coat lightly, and sprinkle with salt and pepper. Working in batches, grill the vegetables until tender and lightly charred all over. Start with the bell peppers, as they take the longest, for about eight to ten minutes; then yellow squash, zucchini, eggplant, and mushrooms for seven minutes; and then asparagus and green onions for four minutes. Make sure not to turn the vegetables too frequently once they’ve been placed on the hot grill to get those grill marks.

Meanwhile, make the balsamic by whisking the two tablespoons of oil, balsamic vinegar, garlic, parsley, basil, rosemary, and salt and pepper in a small bowl to blend. Drizzle the herb mixture over all the vegetables, and serve warm with your Box Hill crab cakes. The final result is light, crunchy, and delicious- the perfect summer dinner!
