We pride ourselves on only buying the freshest crabs from local businesses, as it not only helps the economy but also ensures that we use the highest quality meat for our customers. Some restaurants save money by purchasing crab meat from national processors, but we are passionate about making the most authentic, delicious crab cakes possible.
Once we receive the blue crabs and they are the appropriate size and weight, we season them with a blend of spices, salt, and pepper. Each batch is steamed so the meat stays at the ideal consistency while maintaining its taste. Then, our experienced workers carefully pick them to ensure the shell is completely removed.
