Striped Bass

The striped bass can be found in both Pacific and Atlantic waters and is widely known as rockfish along the Eastern Coast of the U.S. It is prized as a sport fish, and is well-known and respected for being strong and large. It fish has an olive green back that fades to light silver on the sides with a white underside. As the name “striped bass” suggests, it has seven or eight continuous stripes running from its head to its tail. The rockfish is a special type of seafood to Marylanders, as it has been the official state fish of Maryland since 1965!

Cooking Rockfish

Rockfish can be one of the most challenging proteins to cook correctly, as it lacks the amount of fat found in other fish, and the muscle fibers don’t have the same level of connective tissue protection as other animal meat. Many people struggle with overcooking fish, as it only takes a temperature increase of five degrees to make the fish dry and unappetizing. When cooking rockfish, it’s crucial to make sure that it’s cooked to the proper internal temperature of 145 degrees and no further. Also, it’s important to note that fish doesn’t stop cooking when you take it off the heat- it can actually carry over another five or 10 degrees.

What To Pair It With

Fish pairs great with a variety of sides and drinks, especially white wines and garden vegetables. Look for a dry light white to pair with your rockfish meal, such as Pinot Grigio, Sauvignon Blanc, or Albarino. As for vegetables, corn, squash, zucchini, and spinach are great sides to pair with the fresh fish.
