Box Hill crab cakes are perfect for a Cajun-style sandwich!

Maryland’s cuisine has always been proudly seafood centric, much like any state with large bodies of water or on a coastline. For example, Maine has their lobsters and Louisiana’s got their Cajun food. One of the fun things about cooking in the age of the internet is that any combination of flavors you can think of has probably already been thought of! Although Maryland crab cakes are beautiful and pure in their simplicity, sometimes it’s time to mix things up and give your crab cakes a twist of something else – in this case, a taste of the deep south! Cajun cuisine originated with the French-speaking Acadian people who settled in Louisiana, and the spicy, well-seasoned cooking style has become a cultural American staple!

Mise en Place

First things first: let’s make sure you’ve got everything you need. Certainly, you’ll need Box Hill crab cakes! If you’d prefer to make your own crab cakes, the ingredients for them will be included below. To flavor them the way the Cajuns would, you’ll need:

  • ½ cup roasted red bell peppers
  • 1 tbsp each of fresh chives, fresh dill, and 2 tbsp fresh parsley, all minced
  • 1 tbsp each pepper, Dijon mustard, and lemon juice, along with zest of one lemon
  • 1 lb lump crab meat
  • 1 ½ cups plain bread crumbs
  • 1 egg, slightly beaten

For the Bell Pepper Relish

  • ½ cup mayo
  • 3 tbsp sweet bell pepper relish, and 1 tbsp capers, drained
  • 1 tbsp each Dijon mustard, and fresh minced chives and parsley
  • 1 tsp hot sauce
  • Zest and juice of 1 lemon
  • ¼ cup virgin olive oil

And…cook!

If you’re making your own crab cakes, combine all ingredients in a large mixing bowl except the crab meat and bread crumbs. Then stir in half the crumbs and meat. Mix gently. Shape into four crab cakes and place remaining cup of bread crumbs on a plate to coat the outside of each Maryland crab cake. Chill cakes for an hour! To make the relish, combine all ingredients and chill in the fridge. Fry the crab cakes for 5-6 minutes on each side and spoon the chilled relish on top! Voila!
