Maryland Meets Mardi Gras

This upcoming Tuesday will be Mardi Gras, when New Orleans will be the party city of the nation. However, many Marylanders will be stuck at home during this party time, which means we will just have to bring the party to us! To get into the spirit of Mardi Gras with an added Maryland flair, consider whipping up this Creole Fried Rice recipe to pair as a side dish with your Maryland crab cakes.

 

Creole Fried Rice

This recipe tends to work best with cold rice. It’s best to precook your rice the day before you plan to make the dish.

You will need:

1 cup uncooked long-grain rice

2 cups chicken broth

1 pound skinned and boned chicken thighs

1 1/2 teaspoons Creole seasoning, divided

2 tablespoons vegetable oil

1/2 pound andouille or smoked sausage, sliced

1/2 small onion, chopped

1/2 small green bell pepper, chopped

2 garlic cloves, chopped

1 cup frozen sliced okra, thawed

3 plum tomatoes, chopped

2 green onions, sliced (green part only)

 

To create this dish, first spread your cooked rice on a baking sheet. If cooking the same day, allow your rice to cool for about 30 minutes. Cut your chicken thighs into pieces about an inch large, and toss them with about a teaspoon of Creole seasoning. Cook your chicken in oil over medium heat for about 3 minutes. Add in your sausage and cook for another 3 minutes. Add in your bell pepper, onion, and garlic and cook for about 5 minutes. Stir in the remaining Creole seasoning and okra and increase your heat to high. Add in your rice and cook for another 4 minutes, constantly stirring. Stir in your tomatoes and garnish with sliced green onion. Remove from heat and serve immediately.

Not sure how to cook your crab cakes? Here are your steps!

  1. For 8-10 minutes, preheat your over at a temperature of 425 degrees.
  2. Use a pan without grease, using only a small amount of butter or water to cook your crab cakes on.
  3. Cook crab cakes for about 20 minutes, depending on your oven. Crab cakes should be firm and have a golden brown top with an internal temperature of 145 degrees.
