There are three basic methods for cooking crab cakes. The first method is simple preparation.  This method uses jumbo lump crab meat mixed very gently with very little filler.  These crab cakes are fragile and are usually broiled and not fried.  The second basic method mixes the crab with a spiced, mayonnaise based batter with bread or cracker filler.  These crab cakes can be either broiled or fried.  The third method uses a lightly seasoned cream sauce to bind the crabmeat.  The crab cakes are chilled prior to cooking to firm them up and then they are lightly coated in bread crumbs and fried.

Boxhill’s own directions for preparing Maryland’s best crab cakes are as follows:

 

THAW the crab cakes. You MUST preheat the oven to 425° for approximately 8-10 minutes prior to cooking the crab cakes. Remove crab cakes from Styrofoam containers and place crab cakes on an un-greased pan. Add a splash of water or small amount of butter on pan before placing crab cakes on pan to prevent burning or sticking. Place in the preheated oven for approx. 20 minutes or until the cakes are golden brown on top and firm. Please cook crab cakes at an internal temperature of 145° F. Remove from the oven and let set for about 5 minutes before serving.
