During barbeque and crab feast season, we all tend to feast on carbs and salty, heavy food: mac and cheese, French fries, cornbread, baked beans, ice cream, and mashed potatoes. It can feel like a losing battle trying to find light, refreshing, less artery-clogging fare to pair with your crab cakes! A simple solution can be to top your crab cakes with a salsa, something sweet to dilute the savory theme at most potluck events. This summer, it may be worth trying a strawberry salsa – introduce your fruit serving for the day and mix up your summer routine!
Get to Prep Work
Before you begin, as with any recipe, it’s essential to have all of your ingredients on hand! Obviously, you’ll need strawberries and Maryland crab cakes. Additionally, make sure you have:
- 2 lbs of fresh strawberries
- 4 ounces of red onions (diced to a quarter of an inch)
- ¼ cup minced parsley
- 1 cup orange juice
- ¼ cup passion fruit juice
- ½ cup Worcestershire sauce
- 1 tablespoon fresh lemon juice
- 1 ½ tablespoons dry mustard
- 2 ounces each green and red bell pieces (diced to a quarter of an inch)
- 1 ½ ounces shallots, finely chopped
Make sure you’ve got all of your ingredients ready to use – what the French call mise en place, or having all ingredients measured, cut, peeled, and sliced before you start cooking.
And Now You’re Ready!
This is such a simple recipe, you’ll be finished before you know it! Mix all ingredients in a bowl except for the salt and pepper. Season with salt and pepper when you’re finished. Cover and chill for at least an hour while you wait for the flavors to seep into one another. Pro salsa cooking tip: those measurements for the peppers, onions, and shallots, actually do matter, so try and make sure you’re dicing them to the specified size, unless you prefer your salsa chunkier than most! When you’re through, top the crab cakes with the salsa right before serving, as you would with any sauce, and watch your guests take it all in!
