It’s tempting to take the easy route with canned or frozen crab meat, but frozen crab loses its tenderness and canned or pre-picked and pasteurized crab is wet, probably overcooked, and gives off an atrocious fishy smell. A Binding Contract

Beyond the quality of the crab meat, what separates awesome Maryland crab cakes from vaguely-crab-flavored-balls-of-stuff is the amount and type of binder or filler. Unlike ground beef, crab meat doesn’t have any fat to help it hold together in a patty (or cake) shape. At Box Hill we use just enough of our specially formulated binding mixture to keep our crab cakes together. A typical filler has egg for moisture and binding power, breadcrumbs for texture and starch, and a little bit of seasoning to complement the sweet and succulent crabmeat.

The Finishing Touch(es)

Once your crab cakes are portioned and shaped, we recommend sticking them in the fridge or freezer for just a little while so that the binding agent can set up a little bit to hold the consistency and make the cakes easier to handle during cooking. As for the cooking itself, there are generally two routes to take — pan fried or broiled. This one is totally a preference thing — broiling is a little bit healthier, but you’ll miss out on the buttery crispness you get from pan fried. Lastly, and by far most importantly, a dash of Old Bay turns your crabsterpiece into a true Maryland crab cake.
